  • 8 oz spaghetti
  • 3 tbsp olive oil plus more for finishing
  • 3 cloves garlic thinly sliced
  • 10 oz mushrooms sliced
  • 1 tbsp butter optional
  • 0.25 cup Parmesan cheese grated
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped
  • 0.5 lemon juiced, optional
  • 1 pinch red pepper flakes optional

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil and sauté garlic until golden and fragrant.
  3. Add sliced mushrooms and cook until golden brown, 6–8 minutes.
  4. Add butter, seasonings, and lemon juice. Stir well.
  5. Toss cooked pasta into the skillet with mushrooms, adding pasta water as needed to coat.
  6. Finish with Parmesan, parsley, and a drizzle of olive oil. Serve immediately.

Notes

Use mixed mushrooms for best flavor. Add cream for a richer sauce or truffle oil for a gourmet finish.
