Ingredients
  

Salad
  • 2 cups kale, chopped
  • 2 cups baby spinach
  • 1 cup carrots, grated
  • 1 cup cucumber, sliced
  • 1 whole avocado, diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 2 tbsp pumpkin seeds

Equipment

  • Mixing bowls

  • Cutting board

Method
 

  1. Massage chopped kale with a pinch of salt until softened.
  2. Add spinach, carrots, cucumber, avocado, and parsley to the bowl.
  3. Whisk lemon juice, olive oil, garlic, salt, and pepper.
  4. Toss salad with dressing and top with seeds before serving.

Notes

Best served fresh. Keep dressing separate if preparing ahead.
