No-Bake Cookies
  • 1 cup creamy peanut butter
  • 0.5 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2.5 cups rolled oats
  • 0.5 cup chocolate chips
  • 0.25 cup chopped peanuts optional
  • pinch salt

Method
 

  1. In a medium saucepan over low heat, combine peanut butter and honey. Stir until smooth and well combined.
  2. Remove from heat and stir in vanilla extract and a pinch of salt.
  3. Add rolled oats and mix until fully coated with the peanut butter mixture.
  4. Stir in chocolate chips and chopped peanuts, if using.
  5. Using a spoon or cookie scoop, drop cookie-sized portions onto a parchment-lined baking sheet.
  6. Press down slightly to flatten cookies.
  7. Refrigerate for at least 30 minutes or until firm.
  8. Store in an airtight container in the refrigerator for up to one week.

Notes
