- In a medium saucepan over low heat, combine peanut butter and honey. Stir until smooth and well combined.
- Remove from heat and stir in vanilla extract and a pinch of salt.
- Add rolled oats and mix until fully coated with the peanut butter mixture.
- Stir in chocolate chips and chopped peanuts, if using.
- Using a spoon or cookie scoop, drop cookie-sized portions onto a parchment-lined baking sheet.
- Press down slightly to flatten cookies.
- Refrigerate for at least 30 minutes or until firm.
- Store in an airtight container in the refrigerator for up to one week.
