Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup melted butter
  • 0.25 cup granulated sugar
Filling
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream chilled
  • 2 tbsp lemon juice
Topping
  • 1.5 cups mixed berries fresh or frozen
  • 0.5 cup berry jam or preserves
  • 1 tbsp water
  • 1 tsp cornstarch optional

Method
 

  1. Combine graham crumbs, butter, and sugar for crust; press into an 8x8-inch pan and chill for 30 minutes.
  2. Whip heavy cream to stiff peaks and set aside.
  3. Beat cream cheese, powdered sugar, vanilla, and lemon juice until smooth.
  4. Fold whipped cream into cream cheese mixture and spread over crust.
  5. In saucepan, cook berries, jam, and water until thickened; cool.
  6. Spread berry topping over cheesecake and chill for 4 hours before slicing.

Notes

Chill overnight for best texture. Perfect for summer or make-ahead desserts.
