Ingredients
  

Crust
  • 1 1/2 cups chocolate cookie crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons butter, melted
Filling
  • 1 package instant chocolate pudding mix
  • 1 1/2 cups cold milk
  • 1 cup whipped topping
Topping
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 4 tablespoons butter
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract

Method
 

  1. Mix cookie crumbs, sugar, and melted butter and press into a pie plate. Chill.
  2. Whisk pudding mix with milk until thick. Fold in whipped topping.
  3. Spread filling into crust and refrigerate.
  4. Cook butter, brown sugar, and evaporated milk until thickened.
  5. Stir in coconut, pecans, and vanilla. Cool slightly.
  6. Spread topping over pie and chill at least 4 hours.

Notes

Chill overnight for best slicing and flavor.
