  • 1 cup creamy peanut butter not natural-style
  • 0.5 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1.5 cups crushed graham cracker crumbs
  • 1 teaspoon vanilla extract
Coating
  • 2 cups semisweet chocolate chips
  • 1 tablespoon shortening or coconut oil for smooth coating
  • crushed peanuts or flaky salt for garnish, optional

Method
 

  1. Combine peanut butter, butter, and vanilla extract until creamy.
  2. Add powdered sugar and graham crumbs; mix until dough forms.
  3. Roll dough into balls and place on parchment-lined tray.
  4. Chill for 30 minutes.
  5. Melt chocolate with shortening until smooth.
  6. Dip chilled balls into chocolate, garnish, and refrigerate until set.

Notes

Use stabilized peanut butter for best texture. Store in fridge for up to 2 weeks.
