Ingredients
  

Stew Base
  • 2 lb beef chuck cubed
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 medium carrots sliced
  • 2 stalks celery chopped
  • 3 cups potatoes cubed
  • 4 cups beef broth

Equipment

  • Large Dutch oven or pot
  • Wooden spoon
  • Cutting board

Method
 

  1. Season and flour beef, then brown in batches.
  2. Cook vegetables in the same pot.
  3. Add tomato paste, garlic, and beef back to pot.
  4. Add broth and seasonings, then simmer until tender.
  5. Add potatoes and cook until soft.

Notes

Stew thickens naturally as it cools.
