Ingredients
  

Swiss Steak
  • 2 lb cube steak
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 14.5 oz diced tomatoes canned
  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 bay leaf

Equipment

  • Dutch oven or large skillet
  • Cutting board
  • Knife

Method
 

  1. Season and flour cube steak.
  2. Sear steaks in butter and oil.
  3. Sauté onions, carrots, celery, garlic, and tomato paste.
  4. Add tomatoes, broth, Worcestershire, paprika; return steaks to pan.
  5. Cover and braise 1.5–2 hours until tender.

Notes

Great served with mashed potatoes or egg noodles.
