Main Ingredients
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can kidney beans drained
  • 1 can white beans drained
  • 4 cups beef broth
  • 1 cup water
  • 1 cup small pasta

Equipment

  • Large soup pot
  • Wooden spoon

Method
 

  1. Brown ground beef in olive oil and drain excess fat.
  2. Add vegetables and cook until softened.
  3. Stir in garlic, tomatoes, beans, broth, and seasonings.
  4. Simmer soup for 20 minutes.
  5. Add pasta and cook until tender.

Notes

Add pasta just before serving for best texture.
