Ingredients
  

Oatmeal Base
  • 2 cups rolled oats
  • 2 bananas mashed
  • 1 cup milk
  • 2 eggs
  • 0.25 cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup mixed berries

Method
 

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. Mash bananas in a bowl and mix with eggs, milk, honey, and vanilla.
  3. Stir in oats, cinnamon, baking powder, and salt.
  4. Fold in berries and pour mixture into baking dish.
  5. Top with extra banana slices and berries.
  6. Bake for 30–35 minutes until set and golden.
  7. Cool slightly, slice, and serve.

Store leftovers in the fridge for up to 5 days or freeze for longer storage.
