  • 1.5 pounds boneless skinless chicken thighs or breasts, cubed
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 1.5 cups chicken broth
  • 0.5 cup BBQ sauce bold or smoky style
  • 3 tablespoons honey
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt plus more to taste
  • 0.25 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese optional for topping
  • fresh parsley or green onions for garnish

Method
 

  1. Heat oil in a skillet and sear seasoned chicken until golden; remove and set aside.
  2. Sauté onion and garlic in the same skillet until softened.
  3. Add tomato paste, smoked paprika, and chili powder; stir to coat.
  4. Stir in rice, broth, BBQ sauce, and honey. Bring to a simmer.
  5. Return chicken to skillet, cover, and simmer until rice is tender and sauce thickens.
  6. Top with cheese if desired, cover to melt, garnish with parsley, and serve.

Notes

Best served fresh from the skillet with cornbread or salad on the side.
