Main
  • 1 lb Italian sausage
  • 1 lb potato gnocchi shelf-stable or refrigerated
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • 1 cup parmesan, grated
  • 2 cups baby spinach
  • 1 tbsp olive oil if needed
  • 0.5 tsp red pepper flakes optional
  • salt and pepper to taste

Method
 

  1. Brown sausage in a skillet over medium-high heat.
  2. Add onion and cook until softened. Stir in garlic.
  3. Mix in tomato paste and toast for 1 minute.
  4. Pour in chicken broth and heavy cream.
  5. Add gnocchi and simmer 7–10 minutes until tender.
  6. Stir in parmesan and spinach until melted and wilted.
  7. Season with salt, pepper, and red pepper flakes.

Notes

Serve immediately for the creamiest texture. Add more broth if sauce thickens too much.
