  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter divided
  • 4 cloves garlic minced
  • 0.25 cup honey
  • 2 tbsp soy sauce
  • 1 tsp smoked paprika optional
  • 1 cup long-grain white rice uncooked
  • 2.25 cups chicken broth
  • 1 tbsp lemon juice fresh
  • 1 tbsp parsley chopped, for garnish

Method
 

  1. Season chicken with salt, pepper, and smoked paprika.
  2. Heat oil and 2 tbsp butter in a large skillet; sear chicken 3–4 minutes per side until golden. Remove and set aside.
  3. Add remaining butter and garlic to skillet; sauté 30 seconds until fragrant.
  4. Stir in honey, soy sauce, and lemon juice, scraping browned bits from the pan.
  5. Add uncooked rice and stir to coat in sauce; toast 1 minute.
  6. Pour in broth and bring to a simmer. Nestle chicken into the rice.
  7. Cover and cook 18–20 minutes until rice is tender and liquid is absorbed.
  8. Let rest 5 minutes, fluff rice, garnish with parsley, and serve warm.
