Main Ingredients
  • 8 oz pasta penne, bowtie, or linguine
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 10 oz sliced mushrooms
  • 4 cloves garlic, minced
  • 3 cups fresh spinach
  • 1.25 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Equipment

Method
 

  1. Heat oil and butter in a large pot.
  2. Add mushrooms and cook until browned.
  3. Add garlic and seasoning.
  4. Pour in broth and cream.
  5. Add pasta and simmer until tender.
  6. Stir in spinach until wilted.
  7. Remove from heat and stir in Parmesan.
  8. Taste and serve with extra Parmesan.

Notes

Use fresh Parmesan for the smoothest, creamiest sauce.
