Ingredients
  

Burrito Bowl Base
  • 1 tbsp olive oil
  • 1 lb ground beef lean
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can diced tomatoes 14.5 oz
  • 2 tbsp tomato paste
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels

Method
 

  1. Brown ground beef in olive oil in a large pot.
  2. Add onion and garlic, cooking until softened.
  3. Stir in rice, seasoning, broth, tomatoes, and tomato paste.
  4. Simmer covered until rice is tender.
  5. Stir in beans and corn, then rest briefly before serving.
