Ingredients
  

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 8 lasagna noodles, broken
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella
  • 0.25 cup grated Parmesan
  • 1 tbsp olive oil
  • fresh parsley for garnish

Method
 

  1. Brown beef in skillet with olive oil.
  2. Add onion and garlic; sauté until fragrant.
  3. Stir in sauce, tomatoes, broth, and seasonings.
  4. Add broken noodles and simmer 25 minutes.
  5. Top with ricotta, mozzarella, and Parmesan.
  6. Cover until cheese melts; garnish and serve.
