One-Pot Healthy Broccoli Mac and Cheese

Ingredients
  

Main Ingredients
  • 8 oz whole wheat pasta shells
  • 3 cups broccoli florets chopped small
  • 1.5 cups low-fat milk
  • 0.5 cup plain Greek yogurt
  • 1.5 cups shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp butter or olive oil
  • 2 cloves garlic minced
  • 1 tbsp whole wheat flour
  • 0.5 tsp Dijon mustard optional
  • Salt and pepper to taste
  • Paprika or red pepper flakes optional

Equipment

  • Large pot
  • Colander
  • Wooden spoon
  • Cheese grater

Method
 

  1. Boil pasta in salted water for 5 minutes until slightly undercooked.
  2. Add broccoli and cook for 2–3 more minutes until bright green.
  3. Drain and set aside.
  4. Melt butter in pot, sauté garlic, and stir in flour to make roux.
  5. Add milk and whisk until thickened, then stir in Greek yogurt.
  6. Add cheeses and stir until melted and smooth.
  7. Add pasta and broccoli back into pot and coat evenly with sauce.
  8. Simmer 1–2 minutes and season with salt, pepper, and paprika.
