  • 2 cups elbow macaroni
  • 3 cups broccoli florets chopped
  • 2.5 cups vegetable broth
  • 1 cup milk
  • 1.5 cups sharp cheddar cheese grated
  • 0.5 cup mozzarella cheese grated
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add garlic and sauté until fragrant.
  2. Add pasta, broth, and milk. Bring to a gentle boil.
  3. Simmer for 6–7 minutes, stirring occasionally.
  4. Add broccoli and cook until pasta is tender and liquid mostly absorbed.
  5. Stir in cheeses until melted and creamy.
  6. Season with onion powder, salt, and pepper. Let rest before serving.

Notes

Use freshly grated cheese for best melting texture. Add a splash of milk when reheating.
