Ingredients
  

Tuscan Sausage Gnocchi Soup
  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper optional
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 16 oz potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan
  • salt and pepper to taste

Method
 

  1. Brown sausage in a large pot over medium-high heat.
  2. Add onions and cook until softened.
  3. Stir in garlic, Italian seasoning, and crushed red pepper.
  4. Add sun-dried tomatoes and chicken broth; bring to a simmer.
  5. Add gnocchi and cook until tender, 3–5 minutes.
  6. Reduce heat and stir in heavy cream.
  7. Add spinach and parmesan; stir until wilted and melted.
  8. Taste and season with salt and pepper.

Notes

For thicker soup, simmer uncovered a few extra minutes. Add more broth to thin.
