Method
- Brown sausage in a large pot over medium-high heat.
- Add onions and cook until softened.
- Stir in garlic, Italian seasoning, and crushed red pepper.
- Add sun-dried tomatoes and chicken broth; bring to a simmer.
- Add gnocchi and cook until tender, 3–5 minutes.
- Reduce heat and stir in heavy cream.
- Add spinach and parmesan; stir until wilted and melted.
- Taste and season with salt and pepper.
Notes
For thicker soup, simmer uncovered a few extra minutes. Add more broth to thin.
