  • 8 oz pasta penne, rotini, or similar
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 10 oz sliced mushrooms
  • 4 cloves garlic, minced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1.25 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Equipment

Method
 

  1. Heat olive oil and butter in a skillet.
  2. Add mushrooms and cook until browned.
  3. Add garlic and seasoning.
  4. Add broth and cream, stirring well.
  5. Add dry pasta and simmer until cooked.
  6. Stir in spinach to wilt.
  7. Remove from heat and stir in Parmesan.
  8. Adjust seasoning and serve.

Notes

Use fresh Parmesan for the creamiest sauce.
