Ingredients
  

Crust & Crumble
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 cup unsalted butter melted
  • 1/2 cup rolled oats
Peach Filling
  • 3 cups peaches peeled and diced (fresh, frozen, or canned)
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.
  2. In a bowl, mix flour, sugar, salt, and melted butter until crumbly. Press two-thirds into the prepared pan to form the crust.
  3. In another bowl, combine peaches, sugar, cornstarch, lemon juice, cinnamon, and vanilla. Stir gently until coated.
  4. Spread peach mixture over crust. Stir oats into remaining flour-butter mixture and sprinkle over peaches as crumble topping.
  5. Bake 35–40 minutes until topping is golden and filling is bubbling. Cool completely before slicing.

Notes

Store bars in an airtight container at room temperature for 2 days or refrigerate for up to 5 days. Freeze for up to 3 months.
