- Preheat oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.
- In a bowl, mix flour, sugar, salt, and melted butter until crumbly. Press two-thirds into the prepared pan to form the crust.
- In another bowl, combine peaches, sugar, cornstarch, lemon juice, cinnamon, and vanilla. Stir gently until coated.
- Spread peach mixture over crust. Stir oats into remaining flour-butter mixture and sprinkle over peaches as crumble topping.
- Bake 35–40 minutes until topping is golden and filling is bubbling. Cool completely before slicing.
Notes
Store bars in an airtight container at room temperature for 2 days or refrigerate for up to 5 days. Freeze for up to 3 months.
