Ingredients
  

Peri Peri Chicken
  • 2 lb chicken thighs bone-in, skin-on
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 2 red chilies
  • 1 tbsp smoked paprika
  • 2 tbsp lemon juice
Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth

Equipment

  • Large oven-safe skillet
  • Blender
  • Knife
  • Cutting board

Method
 

  1. Blend peri peri sauce ingredients.
  2. Marinate chicken for at least 30 minutes.
  3. Sear chicken in oven-safe skillet.
  4. Add rice and broth, return chicken, and bake at 400°F for 30–35 minutes.
