Ingredients
  

Peruvian Chicken
  • 2 lbs chicken thighs or drumsticks
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
Aji Verde Sauce
  • 1 cup fresh cilantro
  • 2 jalapeños seeded if desired
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
Cilantro-Lime Rice
  • 1.5 cups white rice
  • 0.25 cup fresh cilantro chopped

Equipment

Method
 

  1. Marinate chicken with spices, garlic, oil, and lime juice.
  2. Roast chicken at 425°F until golden and cooked through.
  3. Blend all aji verde ingredients until smooth and creamy.
  4. Cook rice, then stir in lime juice, zest, and cilantro.

Notes

Serve with extra aji verde for dipping—it's addictively good.
