Ingredients
  

  • 2 pieces pre-baked flatbread crusts about 8-inch each
  • 1 cup cooked grilled chicken breast sliced
  • 0.5 cup basil pesto store-bought or homemade
  • 1.5 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes halved
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • fresh basil leaves for garnish
  • red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Brush flatbread crusts lightly with olive oil and spread pesto evenly over each.
  3. Sprinkle mozzarella cheese, add grilled chicken slices, and top with cherry tomatoes.
  4. Bake for 8–12 minutes until cheese is melted and bubbly and crust edges are golden.
  5. Remove from oven, garnish with Parmesan, fresh basil, and optional red pepper flakes. Slice and serve warm.

Notes

For best results, bake flatbread on a preheated pizza stone for an extra-crispy crust.
