Ingredients
  

Pasta Base
  • 20 oz cheese tortellini
  • 1 lb thinly sliced beef steak
  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • salt and black pepper to taste

  • Large skillet
  • Pasta pot
  • Wooden spoon
  • Colander

Method
 

  1. Cook tortellini according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet and sear beef until browned; remove and set aside.
  3. Sauté onions and peppers in the same skillet until softened.
  4. Add garlic and cook until fragrant.
  5. Pour in beef broth and stir, scraping the pan.
  6. Stir in cream and provolone until smooth.
  7. Return beef and add cooked tortellini; toss to coat.
  8. Season and simmer briefly before serving.

Notes

Use freshly grated provolone for the smoothest sauce and best flavor.
