Ingredients
  

  • 4 cups mixed bell peppers, finely chopped
  • 2 cups sweet onions, thinly sliced
  • 2 cloves garlic, minced
  • 1.5 cups white vinegar (5% acidity)
  • 1 cup granulated sugar
  • 1 tsp salt
  • 1 tsp mustard seeds
  • 0.5 tsp celery seed
  • 0.5 tsp turmeric (optional)
  • 0.25 tsp crushed red pepper flakes (optional)

Equipment

  • Large saucepan
  • Cutting board
  • Sharp knife
  • Sterilized jars
  • Canning pot (optional)

Method
 

  1. Chop peppers and onions and add to a large pot with garlic.
  2. Add vinegar, sugar, salt, and spices. Stir well.
  3. Bring to a boil, then reduce heat and simmer for 20–25 minutes until tender.
  4. Taste and adjust seasoning with more sugar or vinegar as needed.
  5. Ladle into sterilized jars and refrigerate or process in a water bath for 10 minutes for canning.
