  • 0.25 cup all-purpose flour
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract optional
  • 1 cup crushed buttery crackers (like Ritz)
  • 0.5 cup unsalted butter melted
  • 0.5 cup shredded cheddar cheese optional for savory version

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. In a bowl, mix pineapple, sugar, flour, eggs, and vanilla until combined.
  3. Spread mixture evenly in prepared baking dish.
  4. Mix crushed crackers with melted butter and sprinkle over top.
  5. Bake for 30–35 minutes or until golden and bubbly.
  6. Cool slightly before serving warm or at room temperature.

Notes

Add cheddar cheese for a sweet-savory twist. Best served fresh from the oven.
