Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 0.5 cup sour cream
  • 0.5 cup crushed pineapple drained
Topping
  • 1 cup crushed pineapple
  • 0.25 cup sugar
  • 1 tbsp cornstarch
  • 2 tbsp water

Equipment

  • Mixing bowls

Method
 

  1. Prepare and bake crust.
  2. Mix filling ingredients until smooth.
  3. Pour into crust and bake.
  4. Cool and chill cheesecake.
  5. Cook pineapple topping and spread over cake.

Notes

Drain pineapple well to avoid excess moisture.
