Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup melted butter or oil
  • 1 tsp vanilla extract
  • 20 oz crushed pineapple with juice do not drain
  • 1/2 cup shredded coconut optional
  • 1/2 cup pecans or walnuts optional

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. Whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, mix eggs, melted butter, vanilla, and crushed pineapple with juice.
  4. Stir wet mixture into dry ingredients until just combined.
  5. Fold in coconut or nuts if using.
  6. Spread batter into loaf pan.
  7. Bake for 55–70 minutes, until a toothpick comes out clean.
  8. Cool 10 minutes, then move to a wire rack to cool completely.

Notes

Add a pineapple glaze using powdered sugar and pineapple juice for extra flavor.
