Ingredients
  

Cake Batter
  • 1 cup unsalted butter softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 cup ground pistachios finely ground
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
Mascarpone Frosting
  • 8 oz mascarpone cheese cold
  • 1 cup heavy cream cold
  • 3/4 cup powdered sugar
  • 1/2 tsp almond extract optional

Equipment

Method
 

  1. Preheat oven and prepare cake pans.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs and vanilla, mixing well.
  4. Whisk dry ingredients and add alternately with milk.
  5. Bake until set and cool completely.
  6. Whip cream with powdered sugar, fold in mascarpone.
  7. Assemble cake and frost, garnish with pistachios.
