Ingredients
  

  • 2 cups all-purpose flour
  • 1 box instant pistachio pudding mix dry
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 2 eggs large
  • 0.5 cup vegetable oil
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 0.5 cup chopped pistachios optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together flour, pudding mix, baking powder, baking soda, and salt.
  3. In a separate bowl, mix sugar, eggs, oil, milk, and vanilla until smooth.
  4. Combine wet and dry ingredients gently, then fold in pistachios if using.
  5. Pour batter into pan and bake 45–55 minutes until set.
  6. Cool slightly, then remove from pan and cool completely before slicing.

Notes

Do not overmix the batter to maintain a soft, tender crumb.
