- Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
- Cream butter and powdered sugar until smooth.
- Mix in vanilla and salt.
- Gradually add flour and mix until dough forms.
- Fold in chopped pistachios.
- Shape and place cookies on baking sheets.
- Bake 18–20 minutes until lightly golden.
- Cool completely, then dip in melted chocolate.
