Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 2 cups all-purpose flour
  • 0.75 cup pistachios finely chopped
Chocolate Dip
  • 6 oz dark chocolate melted

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until smooth.
  3. Mix in vanilla and salt.
  4. Gradually add flour and mix until dough forms.
  5. Fold in chopped pistachios.
  6. Shape and place cookies on baking sheets.
  7. Bake 18–20 minutes until lightly golden.
  8. Cool completely, then dip in melted chocolate.

Notes

Let cookies cool fully before dipping for clean chocolate finish.
