Pizza-Stuffed Pumpkins

Mini pumpkins stuffed with cheesy pizza filling, baked until golden and festive for Halloween dinners or parties.

Ingredients
  

  • 4-6 small sugar pumpkins about 1 lb each
  • 2 cups pizza sauce
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 cup pepperoni slices or turkey pepperoni
  • 1 cup sautéed mushrooms
  • 1 cup chopped bell peppers
  • 0.5 cup diced red onions
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • olive oil for brushing
  • salt and pepper to taste

Equipment

  • Baking tray
  • Mixing bowl
  • Sharp knife
  • Spoon for scooping

Method
 

  1. Preheat oven to 375°F (190°C). Cut tops off pumpkins and scoop out seeds and pulp.
  2. Season inside of pumpkins with olive oil, salt, and pepper. Bake for 20–25 minutes until slightly tender.
  3. Mix pizza sauce, mozzarella, Parmesan, pepperoni, mushrooms, peppers, onions, oregano, and garlic powder in a large bowl.
  4. Fill each pumpkin with the mixture and top with extra cheese and pepperoni slices.
  5. Bake stuffed pumpkins for another 20 minutes until cheese is melted and bubbly.
  6. Garnish with oregano and serve hot.
