Pork Chops with Creamy Mushroom Sauce
  • 4 pork chops (boneless or bone-in, 1 inch thick)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz sliced mushrooms cremini or button
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Dijon mustard optional
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup Parmesan cheese optional
  • 1 tbsp fresh parsley or thyme for garnish

Method
 

  1. Season pork chops with salt and pepper.
  2. Sear pork chops on both sides until golden; remove and set aside.
  3. Melt butter, sauté onion and garlic until fragrant.
  4. Add mushrooms and cook until browned.
  5. Stir in flour; cook briefly, then add broth, cream, and mustard.
  6. Simmer, add thyme and Parmesan, and thicken sauce.
  7. Return pork chops to skillet, simmer until cooked through, and serve.

Notes

A restaurant-quality dish made in one pan. Serve over mashed potatoes or pasta for a cozy meal.
