- Season pork chops with salt and pepper.
- Sear pork chops on both sides until golden; remove and set aside.
- Melt butter, sauté onion and garlic until fragrant.
- Add mushrooms and cook until browned.
- Stir in flour; cook briefly, then add broth, cream, and mustard.
- Simmer, add thyme and Parmesan, and thicken sauce.
- Return pork chops to skillet, simmer until cooked through, and serve.
