Ingredients
  

Pork
  • 2 lb pork tenderloin trimmed
  • salt to taste
  • black pepper to taste
  • 2 tbsp olive oil
Cream Sauce
  • 2 tbsp unsalted butter
  • 1 small shallot minced
  • 3 cloves garlic minced
  • 2 tbsp Dijon mustard
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tsp fresh thyme

Method
 

  1. Season pork tenderloin with salt and pepper.
  2. Sear pork in olive oil in a skillet until golden and cooked through. Remove and rest.
  3. Sauté shallot and garlic in butter in the same skillet.
  4. Deglaze with chicken broth, then stir in Dijon mustard.
  5. Add cream and thyme and simmer until thickened.
  6. Slice pork, return to sauce, and serve warm.

Notes

Use a thermometer to avoid overcooking the pork for best results.
