Chicken Curry
  • 1.5 lbs boneless chicken breast or thighs cut into cubes
  • 1 cup pumpkin purée unsweetened
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon grated ginger
  • 1 cup tomato sauce
  • 1 teaspoon garam masala
  • 1 teaspoon curry powder
  • 1 teaspoon cumin
  • 0.5 teaspoon turmeric
  • 0.25 teaspoon cinnamon
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 0.5 cup heavy cream or coconut cream
  • 0.5 cup chicken broth
  • fresh cilantro for garnish

Method
 

  1. Heat butter and oil in a skillet. Sear chicken until golden.
  2. Sauté onions, garlic, and ginger until fragrant.
  3. Add all spices and stir to coat the onions.
  4. Stir in tomato sauce and pumpkin purée.
  5. Return chicken, add broth, and simmer for 15 minutes.
  6. Add cream and cook 5 more minutes until thick and silky.
  7. Garnish with cilantro and serve with rice or naan.
