Ingredients
  

  • 1 cup graham cracker crumbs
  • 0.5 cup cream cheese softened
  • 0.5 cup pumpkin puree canned
  • 2 tbsp powdered sugar
  • 0.5 tsp pumpkin pie spice
  • 0.5 tsp cinnamon
  • 2 cups chocolate chips white or dark, for coating
  • optional garnish graham crumbs, cinnamon sugar, or drizzle

Equipment

  • Mixing bowl
  • Spatula
  • Microwave or double boiler
  • Tray with parchment paper

Method
 

  1. Combine graham cracker crumbs, cream cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and cinnamon in a bowl.
  2. Chill mixture for 1 hour until firm.
  3. Roll into tablespoon-sized balls and place on parchment-lined tray.
  4. Melt chocolate in microwave or double boiler until smooth.
  5. Dip truffles in chocolate and return to tray.
  6. Sprinkle or drizzle with optional garnish.
  7. Chill 30 minutes until set before serving.

Notes

Store in an airtight container in the fridge for up to 5 days, or freeze for up to 1 month.
