- Combine graham cracker crumbs, cream cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and cinnamon in a bowl.
- Chill mixture for 1 hour until firm.
- Roll into tablespoon-sized balls and place on parchment-lined tray.
- Melt chocolate in microwave or double boiler until smooth.
- Dip truffles in chocolate and return to tray.
- Sprinkle or drizzle with optional garnish.
- Chill 30 minutes until set before serving.
