Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/2 cup nut butter
  • 1/3 cup honey or maple syrup
  • 1/3 cup mini chocolate chips
  • 1/4 cup ground flaxseed or chia seeds
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 pinch sea salt

Method
 

  1. Combine oats, flaxseed, pumpkin pie spice, cinnamon, and salt in a mixing bowl.
  2. Add pumpkin puree, nut butter, honey or maple syrup, and vanilla extract. Stir until dough forms.
  3. Fold in mini chocolate chips until evenly distributed.
  4. Chill mixture for 20–30 minutes.
  5. Roll into bite-sized balls and place on parchment-lined tray.
  6. Store in airtight container in fridge or freezer.
