Ingredients
  

Pumpkin Filling
  • 4 oz cream cheese softened
  • 0.33 cup pumpkin purée
  • 2 tablespoons brown sugar
  • 0.5 teaspoon cinnamon
  • 0.125 teaspoon nutmeg
  • 1 teaspoon vanilla extract
French Toast Coating
  • 2 eggs
  • 0.25 cup milk
  • 0.5 teaspoon cinnamon
  • 1 teaspoon vanilla extract
Roll-Ups
  • 10 slices white bread crusts removed
  • 2 tablespoons butter for cooking
Cinnamon-Sugar
  • 0.25 cup sugar
  • 1 teaspoon cinnamon

Method
 

  1. Mix pumpkin filling ingredients until smooth.
  2. Flatten bread slices and add pumpkin filling; roll tightly.
  3. Dip in egg mixture and cook in butter until golden.
  4. Roll in cinnamon sugar and serve warm.

Notes

For extra crispiness, air-fry roll-ups for 2 minutes after cooking.
