Method
- Preheat oven to 350°F (175°C). Grease or line an 8x8-inch pan with parchment paper.
- Mix oats, flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a bowl.
- In another bowl, whisk pumpkin puree, maple syrup, melted coconut oil, eggs, and vanilla.
- Stir dry ingredients into wet mixture until just combined.
- Spread batter evenly into pan and top with chocolate chips or nuts.
- Bake for 28–32 minutes until a toothpick comes out clean.
- Cool completely in pan before slicing into bars.
Notes
Store in an airtight container at room temperature for 3 days or refrigerate up to 1 week. Can be frozen up to 2 months.
