  • 1 cup rolled oats
  • 0.5 cup pumpkin puree
  • 0.5 cup almond butter or peanut butter
  • 0.25 cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 0.25 tsp salt
  • 2 tbsp mini chocolate chips optional

Method
 

  1. Mix oats, protein powder, pumpkin pie spice, and salt in a large bowl.
  2. Add pumpkin puree, almond butter, honey, and vanilla extract. Stir until well combined.

  4. Roll into 1-inch balls and refrigerate 30 minutes before serving.
