Method
- Crush Oreos into fine crumbs using a food processor.
- Mix Oreo crumbs, pumpkin puree, cream cheese, and pumpkin pie spice until smooth.
- Roll into 1-inch balls and place on a parchment-lined baking sheet.
- Chill for at least 30 minutes.
- Melt white chocolate and dip each truffle until coated.
- Top with crushed Oreos or drizzle with caramel/chocolate.
- Refrigerate until set, about 1 hour.
Notes
Drain pumpkin puree well to avoid excess moisture. Truffles can be made ahead and stored chilled.
