  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 2 cups short pasta
  • 3 cups chicken broth
  • 1 cup milk or half-and-half
  • 1 cup frozen peas
  • 1 tsp Italian seasoning
  • 1/2 tsp dried thyme
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch optional

Equipment

Method
 

  1. Sauté butter, oil, onion, carrots, and celery until softened.
  2. Add garlic and cook 30 seconds.
  3. Stir in chicken and pasta.
  4. Add broth, milk, and seasonings. Bring to a simmer.
  5. Cover and cook 10–12 minutes until pasta is tender.
  6. Thicken with cornstarch slurry if desired.
  7. Stir in peas and heat through.
  8. Serve warm with fresh parsley.

Notes

Adjust thickness by adding more broth or milk as needed.
