Quick French Onion Ground Beef Rice Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 cup uncooked rice white or jasmine
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet (1 oz) French onion soup mix
  • 1 large onion thinly sliced
  • 2 tbsp butter or olive oil
  • 2 cups mozzarella or Swiss cheese shredded, divided
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 0.5 tsp thyme optional
  • fresh parsley for garnish

Method
 

  1. Cook rice with beef broth until tender and set aside.
  2. In a skillet, sauté sliced onions in butter until caramelized.
  3. Add ground beef to onions and cook until browned, draining excess fat.
  4. Stir in cream of mushroom soup, soup mix, garlic powder, pepper, and thyme.
  5. In a large bowl, combine cooked rice, beef-onion mixture, and 1 cup cheese.
  6. Transfer mixture to greased casserole dish.
  7. Top with remaining cheese and bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.
  8. Garnish with parsley before serving.

Notes

Use Swiss or Gruyère cheese for a deeper French onion flavor. Great with leftover rice to save time.
