- Cook rice with beef broth until tender and set aside.
- In a skillet, sauté sliced onions in butter until caramelized.
- Add ground beef to onions and cook until browned, draining excess fat.
- Stir in cream of mushroom soup, soup mix, garlic powder, pepper, and thyme.
- In a large bowl, combine cooked rice, beef-onion mixture, and 1 cup cheese.
- Transfer mixture to greased casserole dish.
- Top with remaining cheese and bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.
- Garnish with parsley before serving.
Notes
Use Swiss or Gruyère cheese for a deeper French onion flavor. Great with leftover rice to save time.
