Ingredients
  

Crust
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup melted butter
Cheesecake Filling
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 tablespoon lemon juice
Raspberry Swirl
  • 1 cup raspberries (fresh or frozen)
  • 2 tablespoons sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Equipment

  • 8x8-inch baking pan

Method
 

  1. Preheat oven to 325°F (160°C) and line pan with parchment.
  2. Mix graham crumbs, sugar, and melted butter. Press into pan and bake 8 minutes.
  3. Cook raspberries, sugar, cornstarch, and water until thickened; strain and cool.
  4. Beat cream cheese and sugar until smooth. Add eggs, vanilla, sour cream, and lemon juice.
  5. Pour filling over crust. Add raspberry sauce and swirl gently.
  6. Bake 35–40 minutes until set. Cool completely, then chill 3 hours before slicing.

Notes

For neat cuts, chill overnight and clean the knife between slices.
