Ingredients
  

Carrots
  • 500 g carrots peeled
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp honey
Ricotta
  • 1 cup ricotta cheese
  • 2 tbsp milk
  • 1 tbsp olive oil
  • 0.5 tsp lemon zest
  • 0.25 tsp salt
Hot Honey
  • 2 tbsp honey
  • 0.5 tsp chili flakes

Method
 

  1. Preheat oven and prepare baking sheet.
  2. Toss carrots with oil, seasoning, and honey.
  3. Roast for 25–30 minutes until caramelized.
  4. Whip ricotta with milk, oil, zest, and salt.
  5. Warm honey with chili flakes.
  6. Spread ricotta, top with carrots, drizzle hot honey.

Notes

Best served warm; add nuts or herbs for extra texture.
