Ingredients
  

Mojo Marinade
  • 1 cup sour orange juice or orange + lime blend
  • 12 cloves garlic smashed
  • 1 small onion sliced
  • 2 tsp oregano dried
  • 2 tsp cumin
  • 1 tbsp salt
  • 1/4 cup olive oil
Pork
  • 4-5 lb pork shoulder
  • 1 tsp salt for rubbing
  • 1 tsp black pepper
  • 1 onion sliced

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Whisk together mojo marinade ingredients.
  2. Rub pork with salt and pepper and make small slits.
  3. Marinate pork at least 4 hours or overnight.
  4. Preheat oven to 300°F.
  5. Roast pork covered for 3–4 hours until tender.
  6. Increase to 375°F, uncover, and roast until caramelized.
  7. Shred and serve with pan juices.

Notes

Overnight marinating gives the most authentic flavor.
