Ingredients
  

Soup Base
  • 2 lb potatoes peeled and diced
  • 2 whole garlic bulbs
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1 medium onion diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Large pot
  • Immersion blender or blender
  • Baking sheet

Method
 

  1. Roast garlic at 400°F until soft and golden.
  2. Sauté onion in butter until translucent.
  3. Add potatoes and broth; simmer until tender.
  4. Add roasted garlic and blend until smooth.
  5. Stir in cream, season, and heat through.

Notes

Add extra broth for a thinner consistency if desired.
