Ingredients
  

Roasted Jalapeño Dip
  • 3 jalapeños roasted and chopped
  • 4 oz cream cheese, softened
  • 0.5 cup shredded cheddar
  • 0.5 cup shredded Monterey Jack
  • 2 cloves garlic, minced
  • 0.25 tsp onion powder
  • 0.25 tsp smoked paprika
  • 0.25 tsp salt
  • 2 tbsp mayonnaise optional
Grilled Cheese
  • 4 slices sourdough or white bread
  • 2 tbsp butter, softened
  • 1 tbsp mayonnaise optional for exterior
  • 0.5 cup extra shredded cheese cheddar or Monterey Jack

Equipment

  • Mixing bowls

Method
 

  1. Roast jalapeños at 425°F until blistered; steam, peel, and chop.
  2. Mix roasted jalapeños with cream cheese, cheddar, Jack, garlic, onion powder, paprika, salt, and mayo.
  3. Butter or mayo the outside of bread slices.
  4. Spread jalapeño dip inside and top with extra cheese.
  5. Cook in skillet on medium-low until golden and melted.

Notes

For extra crispiness, use a cast-iron skillet and cook slowly.
