Ingredients
  

Roasted Eggplant
  • 2 eggplants cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp oregano
Salad Mix
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 0.25 red onion sliced
  • 0.33 cup Kalamata olives
  • 0.5 cup feta cheese crumbled

Method
 

  1. Preheat oven and prepare baking sheet.
  2. Season and roast eggplant.
  3. Combine fresh vegetables in bowl.
  4. Prepare dressing and mix.
  5. Combine all ingredients and serve.
